Weight Watchers Key Lime Pie

My family has been loving all the baking and cooking I’ve been doing lately, and according to the scale, I have been too. I’ve joined Weight Watchers several times in my lifetime and I have to say, if you work the program, it works for you. At time, I’ve been more successful than at other times, depending on my dedication to really working the program. But as they always say, weight loss is a life-style change and if you don’t change your life style (forever), the weight won’t stay off. One of the nice things about attending the Weight Watchers meeting is not only their motivational speaking, but also the low cal recipes they provide. This recipe is wonderful; light and fluffy and citrusy and really takes care of the sweet tooth (of which I am obviously afflicted.) Not to mention it is very easy to make.


Ingredients
Makes 8 servings

1 box (3 oz) Sugar Free Lime Gelatin
1/4 c. boiled water of Key lime juice
2 – 8oz. containers Light Key Lime Light Yogurt (I used Yoplait)
1 – 8 oz tub fat free Whipped Topping, thawed
1 prepared 9″ reduced fat graham cracker crust

Directions

In a large microwave safe bowl, heat water or juice to boiling. Add gelatin and stir until dissolved. With a wire whisk, stir in yogurt. Fold in whipped topping and spoon into graham cracker crust. Refrigerate overnight or at least two hours.

If made as directed, 2 points per serving.
