
One of the things I’ve found that makes Christmas Day so much more enjoyable for me is to avoid the sit-down Christmas dinner of ham and all the fixings. Preparing that kind of meal requires so much time in the kitchen away from my family. And, I find that having a finger food type meal is just as welcoming to my family as the big traditional meal. This year, I did bake a ham, but because one of my sons doesn’t like ham, I made sloppy joes too. Add in chips and a potato recipe, cheeses, olives, some desserts and we had a really great meal.
I chose the Cheesy Potato Casserole from Kraft and everyone in my family loved it.
Ingredients:
1 16 oz. container Sour cream
1/4 tsp. ground black pepper
8 oz. shredded cheddar cheese
1 can condensed cream of chicken soup
1 30 oz. bag shredded has brown potatoes
3 green onions, sliced (optional)
2 cups corn flake, crushed
1/4 cup melted butter
Directions:
Preheat oven to 350°
Mix sour cream, soup, and pepper in a large bowl until blended. Add potatoes, cheese and onions, mix well.
Spoon into a 13×9 inch baking dish sprayed with cooking spray.
Combine remaining ingredients; sprinkle over potato mixture
Bake 45 to 50 minutes or until hot and bubbly
I will make this again and next time, I may include a can of diced tomatoes with green chilies to spice it up a bit.
