Weight Watchers No Bake Chocolate Peanut Butter Cookies
Ingredients
1/2 cup margarine, 32 pts
1/2 cup milk (I used whole milk, it’s what I had on hand) 3 pts
1/2 cup sugar, 15pts (approx.)
1/2 cup sucralose, 0 pts
4 Tbsp unsweetened cocoa powder, 0 pts
1/2 cup peanut butter made from PB2 (8 Tbsp PB2 with 6 Tbsp Water) 8 pts
1 tsp vanilla extract, 0 pts
1/4 tsp salt, 0 pts
3 cup quick-cooking oats, 24 pts
Directions
Mix together Margarine (or butter), milk, sugar, cocoa powder and peanut butter in a small saucepan over medium heat. Bring to a boil and cook for one minute.
Remove from heat and add salt, vanilla extract and oats. Stir to combine.
Drop by tablespoon, teaspoon or cookie scoop on to wax paper covered cookie sheet, or if you get lazy like I did with the last part, I just made one large cookie and will cut it apart. Refrigerate until cookies are set. I froze half my batch to eat next week.
The whole batch by my calculations is 82 pts on blue. Roughly dividing the cookies into 24 pieces, each cookie is about 3 1/2 pts.
The cookie doesn’t set up as hard as ones I’ve made using regular peanut butter and all sugar, but for the chocolate fix you get for fewer calories (and points), I think it’s worth it.
